Buttermilk Lemon Chess Pie

Makes one 9-inch pie.


Baking Instructions

  1. Roll out the pie dough to a quarter-inch and gently set into your 9-inch pie pan. Trim off any pie dough hanging over the edge and set aside.
  2. Preheat oven at 350ºF.
  3. In a small bowl, stir sugars, polenta, and flour together.
  4. In a larger bowl,  combine the remaining ingredients.
  5. Slowly add dry ingredients to wet ingredients, and pour filling into the crust.
  6. Place pie on a cookie sheet and bake. Check the set after 1 hour. It should be set around the edges but jiggly in the middle.
  7. Let cool on a cooling rack.
