Buttermilk Lemon Chess Pie

Ingredients
- 1/2 recipe of Whole Wheat Pie Crust
- 1-1/2 cups sugar
- 1/2 cup light brown sugar
- 1-1/2 Tbsp Community Grains Floriani Red Flint Polenta Integrale
- 1 Tbsp of Community Grains Hard Red Winter Wheat Flour
- 5 large eggs, beaten
- 2/3 cup buttermilk
- 1/2 cup unsalted butter, melted
- 2 Tbsp fresh lemon juice
- 1 Tbsp lemon zest
- 2 tsp vanilla extract
- pinch of salt
- pinch saffron
Baking Instructions
- Roll out the pie dough to a quarter-inch and gently set into your 9-inch pie pan. Trim off any pie dough hanging over the edge and set aside.
- Preheat oven at 350ÂşF.
- In a small bowl, stir sugars, polenta, and flour together.
- In a larger bowl, Â combine the remaining ingredients.
- Slowly add dry ingredients to wet ingredients, and pour filling into the crust.
- Place pie on a cookie sheet and bake. Check the set after 1 hour. It should be set around the edges but jiggly in the middle.
- Let cool on a cooling rack.
